It has more temperate breezes than any other city in Persia. It has even or eight streets, very long, excessively so, some of them with very high buildings, and with vaulted arches over them which past kings have built. For these kings resided here most of the time because of the temperate climate. In these streets there are many artisans of all trades. There are also many cooks, who sell a variety of ready-prepared food, from sheep with tails as fat as pigs, mutton being the meat most consumed throughout Persia, especially in this city, where no other flesh is eaten, not even fish from the sea, as there is no port in the whole country where there is fishing. That is to say, whole sheep are roasted in ovens, and boiled with a variety of pottages, meatballs, pies, heads and feet, tripe stuffed with rice and spices, and a thousand more varieties and concoctions in their manner.
